Gyp Sea Hotel – Breakfast Review The breakfast at Gyp Sea Hotel was a mixed experience. The food itself was solid, earning a 4/5, and the ambiance was a standout—its West Indies-inspired décor set it apart from other hotels on the island in a refreshing way. However, the service was 2/5, though not due to the two hardworking gentlemen running the restaurant. They were doing everything—bussing tables, taking payments, serving dishes—which made the experience feel understaffed rather than a reflection of their effort. A busboy or host to assist would have made a big difference in efficiency. Unfortunately, the long wait times (10-15 minutes for a second coffee) make it unlikely that I’ll return for breakfast. If the hotel improves its staffing, it could be a much better experience.

Thank you to all the staff at Gyp Sea who made our stay during our 25th anniversary trip absolutely magical. The attentive staff made sure every single detail was taken care of each and every moment. We will yearn to return to this enchanted and secluded heaven on earth soon!

It was very relaxing and had beautiful landscaping! The food was phenomenal! We both had the tuna tartare for an app, and it was very fresh. The chicken caesar I ordered was delicious! The shrimp skewers were awesome as well. Service was impeccable.

My stay at the Gyp Sea Hotel was absolutely wonderful. Nestled on Colombier Hill, the hotel offers stunning views of Flamands Bay that make every moment feel special. The bohemian-colonial décor of the rooms is elegant and cozy, with every detail designed for comfort. The dining experience was excellent and fresh, flavorful dishes served in a beautiful setting. I also enjoyed relaxing at the exclusive Gyp Sea Beach Club, which felt like a private paradise with its turquoise waters and tranquil vibe. The staff were friendly, attentive, and made sure every part of my stay was perfect. Whether it’s for a romantic escape or a peaceful retreat, Gyp Sea Hotel is an incredible choice. I’m already looking forward to my next visit!

Our stay at GypSea was amazing. The service and hospitality were excellent from the moment we arrived throughout our entire stay. Rooms are highest quality and impeccably kept. Within walking distance to Colombier Beach, which was an amazing hike and beach. They helped us to coordinate a rental car, shuttle to airport and to the beach club. They also helped with dinner suggestions and reservations. They communicated actively via WhatsApp to address any needs we had during our stay. We would highly recommend both couples and families to stay at the resort. We also met some other lovely couples and families were on vacation there. We look forward to returning!

We are so happy we chose Gyp Sea hotel. From the incredible views from our private balcony to the absolutely spotless rooms to the impeccable service. The free access to their beach club situated on the beautiful Saint Jean beach (which was our favorite beach) is a huge perk. There is a turtle sanctuary at the hotel and the turtles wondering around the property are super friendly and cute if you're an animal lover like me. If you're torn between hotels I highly recommend this one. If you prefer to be right on the beach, book their beach houses instead. Definitely take bug spray though as there are mosquitoes everywhere on the island.

Amazing rooms, beds are incredible and don't start me on pillows and the smell of the sheets. Very important you will get free Gypsea beachclub access which is amazing!

I recently stayed at Gyp-Sea hotel in St. Barths, and to say I was disappointed would be an understatement. The entire experience was a letdown from start to finish. First off, the quality of everything in the hotel was abysmal. The furniture was cheap and uncomfortable, the rooms felt outdated and in desperate need of renovation, and to top it all off, the jacuzzi on our balcony was filled with bugs. Yes, bugs. It was not only disgusting but also completely unacceptable. This hotel markets itself as a luxury destination, but it's nothing more than a facade. Sure, the decor might look nice in photos, but don't be fooled. It's all smoke and mirrors. The reality is that Gyp-Sea is just an old hotel with a fresh coat of paint. The only redeeming qualities were the view and the staff. I will give credit where credit is due—the view from the hotel was stunning, and the staff were quick to respond to request. However, even their efforts couldn't salvage our experience. In any other circumstance, we would have switched hotels without a second thought. Unfortunately, everything else was sold out, and there were no available flights out of the island. Trust me when I say, do yourself a favor and steer clear of Gyp-Sea hotel. It's not worth the disappointment.

Gypsea Hotel was an outstanding experience! During our stay the staff was more than friendly, very helpful, and always willing to try to help enhance our stay. They always greeted us with smile, asked how our days were, made recommendations, and went above and beyond. Ninon specifically at the reception desk was outstanding! We hope she stays around for our next stay! The hotel itself was very quaint, the room was very nice, and always well kept by the housekeeping team. Our only slight issue was we had a group during our last night that rented out the pool area for a party. We weren’t notified that there would be loud music until late in the evening. However we discussed this with the manager Yohan Adam, and he offered a quick resolution that more than took care of the disruption to our evening. With the exception to the last night party, the resort was quite peaceful and tranquil. The food at the hotel was excellent! We had a night of the “Chefs Table” and the chef was great about making custom menu recommendations and made our dinner very memorable. We also rented a Moke thru the hotel which was great…but note the company Cool Rental will require the car to be returned with a full take otherwise you will be charged for gas, but It was a great rental option and highly recommended. One of the best perks about staying at the Gypsea hotel was the ability to book sun beds at the Gypsea Beach location with free transportation to and from. The staff at the Beach club was also excellent! Overall I highly recommend Gypsea Hotel for your stay in St. Barth. We will definitely consider returning to this hotel for our next stay!
