Couldn't do enough for their guest. I'd like to mention Thomas who served us the first day. He was really passionate and helpful. Again Ashford Castle proves to be just fabulous, the Castle and its staff are of such a high standard I find myself booking my next visit already. Being served wine and tea in the cinema during one of their late movie showings along with the complimentary popcorn and jellies was a real treat. For Coeliac's there are allergy menu's and absolutely fantastic gluten free bread, it is rare to find anywhere that serves gluten free bread of such high quality I was genuinely impressed. At breakfast there is a selection of gluten free scones and cakes freshly baked at the hotel along with gluten free granola and a coeliac breakfast menu - if i could I would have their breakfast for my 3 meals of the day ;) The only reason why I have left out a star is a result of the Guinness Stew (€40.00) in the Dungeon room being stringy and tough, we mentioned this to the wait staff and we overheard the diners beside us also make the same complaint. Honeycomb ice cream we had in the drawing room was disappointing as it was more ice than cream. Otherwise, the food and drink was beautifully made and presented.

Spending 2 nights & 3 days on the venue is a great experience when adding in some of the experiences on offer. Starting with Clay Shooting - excellent 1-1 coach Jonathan who explained everything down to the smallest detail. To John the Englishman who visited a few years ago to care for his sick parent, now driving around this beautiful location. A very welcoming gentleman and knowledgeable. To the Captain & staff on the ‘Isle of Innishfree’ your successful 90% return rate to shore was reassuring. Your knowledge of Loch Corrib was intriguing and exceptional. To our Wine connoisseur I am so sorry I didn’t capture your name please forgive me, your words during our wine tasting adventure were amazing & was probably the quickest time passed during our meeting you. The 5 Course evening meal in the restaurant was excellent so good that we couldn’t make room for desert or coffee. Afternoon Tea amazing, presentation 10/10 taste again superb. Champagne smooth. Lake view Suite lovely views of the Loch waking up to this view is simply inspiring. To summarize if you visit here and do not enjoy your stay I would be amazed. Thank you Red Carnation Group - your Staff on resort are exceptional and this clearly is demonstrated by the retention policy with some staff members being engaged over 30 years, albeit with different owners. We truly had an outstanding visit so much that the wife wants to return for our 25th Anniversary & 30 years together celebrations. Stayed here for two nights recently as a present for my wife's birthday, was a wonderful trip. From the moment you arrive at the gates at check in until you leave you are made to feel special by the wonderful staff. Food is amazing with dinner in the George V restaurant, afternoon tea and breakfast all top class. Highly recommend the boat trip around the lake and the walk with the wolfhounds is a unique experience. Will hopefully get another opportunity to stay here in the future
